Begins with aromas of cherry, herbs, spices and sweet vanilla. Medium bodied, the wine exudes a luxurious and plush mouthfeel of blackcurrants, blackberry and black cherry. Dark cocoa undertones give way to a velvety smooth finish. Enjoy with pasta arrabiata, filet migon, ratatouille, lasagna.

    Description

    Although often dubbed as a blending partner for Cabernet (particularly in Australia), Merlot deserves recognition in its own right. This is evident in the distinctive Merlots produced in California and Bordeaux but Australia has been slower to recognise the merits of this delicious grape. The name Merlot is said to derive from merle—the French word for the blackbird, likely a reference to the colour of the grape.

    The wettest season on record in the Canberra District created a unique backdrop for this wine. With hailstorms in January, yields were reduced nevertheless, diligent disease control and unwavering dedication prevailed, resulting in above-average quality grapes.

    Our winemaking process begins with a personal touch – hand-selecting the best grapes for our Merlot. These grapes are treated with care, gently crushed and fermented alongside their skins in open-vat fermenters. We take the time to perform daily hand plunging, coaxing out the vibrant colours, smooth tannins, and delicious flavours. After fermentation, the wine is transferred into older French oak barrels for 12 months maturation.
