Vibrant cherries and raspberries give way to savoury earthy characters of truffle and spice. The wine is crafted in an "Old World" robust style. Maturation in older French oak has allowed the complex flavours to integrate and harmonise. Enjoy with sticky BBQ pork ribs, pork buns, duck confit.

    Re-released for Christmas from our private cellar stock, only available till 24th December or while stocks last.

    Cloudy and wet conditions kept temperatures cool throughout the growing season and prolonged ripening. With hailstorms in January, yields were reduced. Nevertheless, diligent disease control and unwavering dedication prevailed, resulting in above-average quality grapes.

    Once desired flavours were reached the fruit was handpicked and processed on site. The must was inoculated with a specially selected cultured yeast renowned for its ability to accentuate the distinct characteristics of Pinot Noir. To enhance complexity and aromatic qualities, approximately 30% of the grapes were fermented as whole bunches, allowing fermentation to occur within the individual berries. These carefully chosen techniques played a vital role in the development of intricate flavors and captivating aromas. The wine was pressed to a mixture of new and older French oak casks for 12 months maturation.

    Complex flavours ranging from vibrant red berries like cherry and raspberry to savoury earthy characters of truffle and spice. The wine is crafted in an "Old World" robust style with lots of skin contact both pre, during and post fermentation which allows for complete flavour and aroma extraction and mouthwatering grippy tannins to develop.
