A legendary Canberra district blend, we've produced this in our own unique style with cold skin maceration providing robust colours and flavours complimented by maturation in French oak. Bold, luxurious and elegant, goes beautifully with a perfect steak. Will also cellar well for 15 years or more.
Description
Made from our estate grown vines this wine is made by co-fermenting hand-picked Shiraz with 3% Viognier grapes. The juice and skins are soaked together for two days at around 4 degrees prior to fermentation and 30% whole bunches are included in the ferment to ensure maximum colour and complex flavour extraction. The wine is plunged daily by hand to extract further colour and flavour from the skins. Maturation in a mixture of old and new French oak barrels for 14 months softens the tannins and integrates the oak and fruit. The resulting wine is bold, luxurious and elegant with a silky mouthfeel, flavours of black pepper, stewed plums and cherries and a lingering soft finish.
