Sparkling Chardonnay

A delicious cool-climate wine, with grapes grown in the neighbouring Hilltops region at Barwang Vineyard and the wine processed and made in the Canberra District. White peach and citrus flavours have been enhanced by two years lees maturation to ensure depth and complexity of flavour. A long and elegant finish with hints of brioche, hazelnut and a clean mineral edge.
Description
The fruit was picked and processed at our winery within 24 hours of picking to ensure premium quality juice. It underwent a temperature controlled ferment in stainless steel to preserve delicate flavours. After ferment the wine was left on lees and gently stirred for 4 months, this helps to increase the complexity and depth of flavour. We use the traditional French method of secondary fermentation in bottle to obtain the sparkle. Maturation on lees for 2 years added the final touch of richness and texture to the wine.
Smooth flavours of white peach and lemon zest with a delicate persistent bead. A long and elegant finish with hints of hazenult and brioche and a clean mineral edge.
